I have a recipe that calls for canned chestnuts poached in stock to warm them through. Can I substitute fesh chestnuts - do I roast them first or boil them ?

The canned ones have been boiled first. Try steaming them instead of boiling, you will retain more flavour.
Reply:Fresh chestnuts are absolutely at their best roasted - doing anything else with them is criminal! Don't leave them too long and they will be fine, and not dried out at all. Enjoy!
Reply:I dont see why not. Why not call a frined or family first tho. It always helps to get a secound opion (specialy when it aggrses with your own). So i can only say go for it, give it a shot, and if it dosent work well try, try again.
Reply:boil them, if u roast them they will dry out too much
