Why are water chestnuts so great in a stir fry when they don't taste of anything?
I believe it's the crunch!

Reply:It gives a counterbalance of texture to the dish. Meat usually cooks up soft, as do the vegetables. So, the water chestnuts are usually the only crunchy thing in the dish.
Reply:They do have a lovely flavor when cooked. When used in a stir fry they give just the snap that the rest of the vegetables blend so well with.
