Reply:I'd recommend an Asian market and if you live near Ranch 99 market (An Asian chain supermarket).
Ranch 99 had lower prices for chestnuts than the regular supermarkets... lower by $2 a pound. However, I haven't looked recently to see if chestnuts are in-season.
Reply:When I was achef I to would get my chestnuts out of season in Asian stores, they sell in the dry goods section a dried chinese chestnut, what you do is put them in a metal or glass bowl and like beans soak them, but with chestnuts use warm or boiling water, let them soak until hydrated and then use them for you recipes.
Here in Canada we import ours from either Italy or Korea, and I have seen them from September to May or June, one thing is they do keep, so if you want to buy 5-10 lbs they will not go bad, as the shell protects them, I roast my fresh ones, with a small slit and a sprinkle of salt, the salt helps loosen the shell, 10-15 minutes at 375 is enough and then peel the shell off, of course you can boil them to and do the same thing.
